The grapes were sourced from Outlook vineyard in Washington’s Yakima Valley.

Harvest and winemaking notes
To achieve our goal of making this wine stand out, we started by picking the fruit at flavor maturity.  Following destemming, we allowed the juice to remain in contact with the skins for eight hours in order to extract additional flavor.  We let the juice clarify and then transferred it to French oak barrels for fermentation.  Each barrel was inoculated with a different strain of yeast to encourage complexity of flavor. Temperature was held between 57 to 64 degrees Fahrenheit to prevent the aroma of the fruit.  Once fermented, we aged the wine on its lees for three months to add complexity of flavor. 229 cases produced.

Winemaker and pairing notes

A medium-bodied Sauvignon blanc with a complex, fruity aromas of gooseberry, quince, peaches and mango.  The nose carries through to the palate and is backed by great minerality and a balanced finish.
